Manuka honey is honey made using the nectar of the Manuka flower. Manuka is a member of the tea tree family and is native to New Zealand. It is found in wild, uncultivated areas. Its wood and flowers have been used by Māori people for hundreds of years for their healing properties. When honey bees were introduced to New Zealand in the mid 1800s, the honey produced when they visited the Manuka flower was found to be rich and distinctive in taste. And because the Manuka plant was used medicinally, Manuka honey was also used in this way, particularly to help wounds heal
The ‘activity’ referred to is the antibacterial activity of the honey. This used to be measured according to the ‘Unique Manuka Factor’ or UMF, which took into account the Leptosperin, DHA and Methylglyoxal content. More recently, research has shown that the antibacterial activity is determined by the Methylglyoxal content, which is why we use this measure to grade our Manuka honey.
The very best product needs the very best raw ingredients. For Manuka honey, this means placing our hives in remote locations, which are difficult to access. It’s a bit of a mission to get to the perfect spot for our bees, which makes harvesting it quite expensive. The Manuka plant also has quite a short flowering season, only producing its nectar for 3 - 4 weeks each year. And, if anything unusual happens in terms of the weather, it can be even less than that. All of this means that every drop of Manuka honey is a precious resource and its price reflects how valuable it is.
